From the Cave
Only the finest Gruyères are selected to age in the 22 million year old Katbach Cave. Extended cave aging makes for a more complex cheese with a smooth, dense texture and a pronounced crystal crunch not found anywhere else in the world.
Dedicated to Tradition
Swiss tradition, tastes, and practices have stood for many generations. In fact, some originated centuries ago. At Emmi, we are dedicated to protecting the integrity and heritage of the cheeses we make to ensure only the finest flavors and recipes come to you and your table.
Inside Emmi —
Our Kaltbach cheeses are carefully crafted in the deep, cool Kaltbach Cave. Located in the Alpine Valley of Switzerland, the cave is a 22-million-year-old natural sandstone labyrinth that ages cheese unlike any other place in the world.
