Le Crémeux Pizza with Bacon and Roasted Pineapple

  • 8 ounces KALTBACH Le Crémeux Cheese
  • 1 cup heavy cream
  • 1 shallot, roughly chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup fresh pineapple, sliced into 1/8-inch-thick quarter rounds
  • 4 strips thick cut bacon
  • 11 ounces prepared pizza dough


  1. Heat oven to 450 degrees F.
  2. Shred Le Crémeux cheese. Add 1 cup shredded cheese to food processor with heavy cream, shallot, salt and pepper. Process until well combined. Set aside, along with remaining cheese.
  3. Line baking sheet with parchment paper. Place pineapple slices on parchment and bake 10 minutes until edges just begin to brown. Remove from oven.
  4. Cut bacon into ½-inch pieces and cook. Remove from pan and set aside.
  5. Roll pizza dough out into a 12-inch circle. Place on pan (or pizza peel if transferring to pizza steel in oven). Spread cheese and cream mixture to edges of dough. Top with remaining cheese, roasted pineapple slices and cooked bacon pieces. Bake until dough is cooked through and crisp on bottom, about 15 minutes. Slice and serve immediately.
