Kaltbach™ cheeses are carefully crafted in the deep, cool Kaltbach Cave located in the Alpine Valley of Switzerland. The Kaltbach Cave is a 22 million-year-old natural sandstone labyrinth with a small tranquil river running through. In fact, Kaltbach is a German word that translates to “cold brook". The natural brook inside the cave allows for a constant humidity of 96 percent in the mineral-rich cave air.

Le Gruyère has been crafted since the 12th century using the same recipe. Today more than 160 creameries in small villages throughout a designated area in Switzerland carry on this same tradition. Not only do farmers feed their cows a naturally sustainable diet of pasture grass in the summer and hay in the winter. Our cheesemakers also incorporate only the freshest milk supplied twice a day from nearby farms.

One cold day, with food scarce in the open pastures, Leon heated up a piece of cheese on the open fire to ease his hunger and keep warm. He found the melted cheese had a transcendent flavor.
