Green Bean Casserole with Gruyere
This cheesy, rich variation of green bean casserole is perfect for holiday parties and thanksgiving menus. We've replaced the canned cream of mushroom soup with a rich, cheesy mushroom sauce made from scratch. We're using fresh green beans for optimum taste and texture and adding extra cheese on top before baking for richer flavor and taste!
Ingredients
| 1 lb | rinsed and trimmed fresh green beans |
| 2 tbsp | unsalted butter |
| 8 oz | mushrooms, quartered |
| cracked black pepper | |
| 2 tsp | granulated garlic |
| 2 tbsp | all-purpose flour |
| 1 cup | chicken stock |
| 1 cup | half and half |
| 3.5 oz | container shredded gruyere, divided |
| 1 ½ cups | fried onions |
Instructions
- Preheat oven to 400 F.
- Fill a large pot of water ¾ way with water and a tbsp of salt. Bring water to a boil. Cut green bean ends off and trim them in half. Place green beans into the boiling water for 2-3 minutes to cook them lightly. Remove from the water with a slotted spoon and into a large bowl filled with ice water. Set aside to cool.
- Heat a skillet over medium heat. Add the butter, once melted add in the mushrooms and stir together. Cook for 6-8 minutes or until the mushrooms are golden brown. Season with a pinch of kosher salt and cracked black pepper. Turn the heat to medium low and add in the garlic powder and the flour to the mushrooms and stir to combine.
- Add in the chicken stock to the mushrooms and bring to a simmer. Once simmering, add in the half and half and stir together. Simmer for an additional 6-8 minutes or until the mixture is thick enough to coat the back of the spoon. Remove sauce from heat.
- Add in the 2/3 of the shredded gruyere cheese and ½ cup of fried onions and stir together.
- Strain the green beans from the ice bath and blot dry with a paper towel. Add the beans and sauce to an ovenproof casserole dish and stir together until combined. Top the border with the remaining fried onions and remaining 1/3 cheese over the top of the beans.
- Bake for 10-20 minutes or until the top is golden brown and bubbly.
